Seriously. Got five minutes? Then make pesto. And it is DELICIOUS. And easy. And did I mention five minutes?

You'll need:
  • 2 cups loosely packed basil leaves. (I used one basil "plant" from Trader Joes)
  • 1 T minced garlic
  • 1/3 cup pine nuts
  • 1/2 cup shredded parmesan cheese (or "farm" as Charlie calls it)

Put all above ingredients in the bowl of your food processor. (Oh yeah, you need a food processor). Process until them mixture resembles a thick paste. Then, with machine running, slowly drizzle in 1/2 cup olive oil in a slow steady stream. Season with salt and black pepper.

That's it.

We ate ours tossed with farfalle pasta and grilled chicken. But you can eat yours however you want.

  2. Mmmm, sounds yummy! I just love pesto! It's funny too, 'cause I just got a recipe from my mom for pesto salmon that she's made before and it's so delicious! I need to make it for the hubby now :o)

    Because I made this two nights ago.

    And lemme tell ya... the gluten-free pasta DOES NOT HOLD UP.

    And the pesto? With the exact same ingredients you just described? Awesome as long as you don't let your first-grader dump the entire package of pine nuts into the processor, and process the heck out of it for seven minutes until it is a pretty gummy pasty mess.

    Sorry.

    The chicken somewhat redeemed it - until my poor kiddo asked where chicken comes from.

    ARGH.
